Here we are meal prepping again. This time Tonkatsu (pork cutlet). This recipe has you mix the flour into the egg before coating the cutlet. Makes the coating too thick so you have to sleuce most of it off. Oh well, now we know less flour into the eggs.

Yams need a few hours in the crockpot. As expected, overnight in the crockpot makes the beef plastic spoon tender, which is great!
The crockpot also turns this recipe from a 3 hour meal into a half hour the night before and 15 minutes of roux work the next morning. That's been keeping me from putting this into regular rotation because I pretty much have to dedicate a Saturday afternoon when I make this the usual way.

This week we're trying something I've wondered about for a while. This is a Japanese beef curry recipe, and she wants you to simmer for an hour and a half to tenderize the beef after searing. Well, I could throw everything into the crockpot and leave it on low for 8 hours. We'll find out tomorrow if that was a good idea.
Also I'm using left over sweet potatoes from Thanksgiving instead of Russets. So that's a change.

AWS rolled out a thing somewhere around 11:10 Am mountain, and totally broke AWS. After we eventually convinced the there was a problem, the official recommendation was "don't make mutations to AWS, and the load will decrease."
