Thanks for the answers. Allow me to think out loud here...
A couple of reservations I have (apologies for being verbose);
1-2% is much too lean for me to make my ground jerky from without drastically changing the recipe and increasing labor which will up COGS—ingredients & related costs (e.g., I'd have to buy fat to add to the meat and run it through my meat grinder to remix/re-grind) I've used 97% lean before, and it was a disaster. I could see myself probably mixing in 73% or something, if the cost of your product was lower (especially if my customers like the meat from you and I if I could guarantee a certain volume purchase per month).
2. But $15/lb is almost 3x what I pay now, and more than what two packs of my jerky sells for. So I'd have to increase my prices (not even considering the above additional costs of ingredients/labor, and not even factoring in shipping from wherever you are to me), and I'm not planning on raising prices anytime in the next five years, at least.
I know that you're just looking for a test, but even with that, it's still too lean and too much $$ even if I did a one-off "ancestral blend" ground jerky product. My product is unique and I'm not changing over to muscle cut strips from my ground strips, because anyone can do muscle strip cuts in the jerky market (everyone does). The method and ingredients of my jerky differ such that I doubt there's a competition there.

Sure, it's OK if you like eating hot plastic. And if you enjoy a hormone-injected bird loaded up with gross ingredients (usually hidden under the "natural flavorings" or "spices" umbrella)

A couple of things I have noticed hiding in these chickens:
Starches (potato dextrin, corn starch, etc.)
Seed oils (sunflower/soy lecithin, canola oil, "vegetable" oil, soybean oil). Chicken has enough natural fat to cook plenty well on a spit!
Modified corn starch (aka Maltodextrin)
This is a hidden sugar that's many times worse than actual sugar. Companies can get away with using the label "sugar free" on packaging for their food-like substances by using Maltodextrin because it doesn't go by the name, "sugar"
Dextrose
Another ingredient companies use to claim something to be sugar free or "uncured." Dextrose is basically something only people who are suffering from diabetic "lows" should use, and under a doctor's supervision, to raise their blood glucose when it's dangerously low (aka diabetic hypoglycemia), although fruit juice would do the same thing, and just as rapidly.
Athletes wanting to GAIN weight will often use dextrose that's contained in many bodybuilding products
Why on earth dextrose and Maltodextrin are in so many mainstream and even diet products is beyond me. Neither of them offers any benefit whatsoever, other than to the manufacturer's bottom line, since real cane sugar or beet sugar are much more expensive to produce than to simply extract the liquid from fresh corn and hydrolyze it mechanically (spun rapidly in a centrifuge to draw out the sugar and then it is spray dried or freeze dried).
Anyone who's diabetic is better off having a couple grams of real sugar than eat anything containing either of the above two fake sugars. They can shoot one's blood glucose through the roof (figuratively speaking).

I couldn't get used to Coracle's UI on desktop. I think it was my first week here. I haven't tried it since.
PrimaI desktop isn't great for me either. I prefer it on mobile for some things though. I think being so close to the bird app UI makes it familiar/comfortable.

I think Allulose has been around for at least six years. I discovered actual uses cases for it back in 2019 which is when I started using it, but I know people were using it in liquid form adding it to their coffee and tea, going back to at least a year prior.
I've found that the best way to buy it is in bulk, at either the brand's website or through sites like Netrition.com or Amazon. Another thing to note is that while there are many brands of Allulose powder, as long as the ingredients list states 100% Allulose and nothing else, you can get the right size or price that works best for you -- the brand won't matter, since it's all sourced from one company called Tate & Lyle. Brands I've liked most: Fitlane, MicroIngredients, and G-Sweetz. I personally don't trust the Allulose sold by Splenda, since they've been known to add Maltodextrin and dextrose to their products.

It's not a stupid question...
Lots of companies (and home cooks) add sugar to jerky because it adds a little tenderness to the jerky and offers flexibility so it's not dry and crumbly.
As a diabetic, I personally don't want store-bought jerky because it's got too much sugar in it, so I started making my own, using Allulose.
Allulose is a natural sugar substitute derived from figs and sometimes corn, and offers the textural quality to my jerky that sugar would, but Allulose isn't treated like sugar in the body. In fact, since it's a natural way to upregulate GLP-1, it can help with glucose tolerance and in many cases, actually lower blood glucose, so for these reasons, diabetics may prefer Allulose to other sugar substitutes. If you are not interested in this sort of thing, my jerky probably isn't for you.
