Regardless of using sourdough starter or commercial yeast, any bread that relies on bulk fermentation takes less time at higher altitudes than recipes at sea level. For me, an "overnight" is more like 6 hours. Actually letting it go overnight means sticky, floppy dough - good for focaccia or "no-knead" breads, but bad for a boule.
The King Arthur Baking guide to baking at high altitude goes into detail on what to tweak, what that change possibly does, and why it works. For me, I've found that a touch more flour than called for and less time (usually) does the trick for yeast breads.

Pick a theme you like first, then let that drive which static site generator you use. Unless you want the guts of building/hosting to be your hobby, chances are which one you use doesn't matter. It's also simple-ish to change later if you get bored.

@nprofile…cl5w If you're not looking to monetize (subscriptions, etc.), GitHub Pages (or GitLab's equivalent) are pretty easy for static site blogging. They both support basically any generator you want, so you aren't tied to a minimal subset of Jekyll anymore.

@nprofile…5k2y I agree. Now that the lack of oversight is a feature, it's more important than ever* to try to talk to the folks you'd be responsible for before they get sucked in to it.
Talking to family about questionable investments they don't entirely understand is difficult, especially when you don't share their excitement. Cryptocurrency gets a semi-religious fervor of "investing in commemorative gold coins" or collecting beanie babies. The FTC has some good guidance on what to do after paying a scammer (below), but the same ideas are true before they lose it all too.

My work-week-ish staple is a grocery store rotisserie chicken, a small bag of frozen mirepoix (carrots, celery, onions), frozen peas or other veggie to microwave, some fresh fruit, a small box of pasta, and whole wheat rolls.
Day one is chicken and bread and a little fresh fruit. Save the meat from the carcass and use the bones, skin, and mirepoix to make some stock. Next days are chicken sandwiches with the rolls, chicken soup with the noodles, etc. Sprinkle in some frozen veggies and fresh fruit to round it out.

@npub19x5…uns3 I'm pretty sure my contractor grade "smart oven" is secretly mining crypto or something. I didn't think it was possible for a simple appliance to have a UI that sucks so badly. It's slow and feels warm, even when the oven is cold.
