Which app are you using that get stuck at installing? And how often do you intsall new app that it's bothering you?
Updates can be done all at once without validation, just run it when you charge your phone and don't need it for the next 5min.
The only app I feel super slow is Proton Mail (nprofile…707c) but I don't think it has anything to do with GrapheneOS.
