Having just put Linux on a cheap Acer Chromebook that had fallen out of support, it's running better with Gnome than it ever did with ChromeOS. To say nothing about the lighter alternatives.
Some models don't convert well, but most do.
Having done this sort of thing en mass, the biggest impediment is the models that require you open them up to enable developer mode.
