Good compression takes a long time, especially for 60 minutes of video. Using a better codec will get a smaller filesize, but will take longer, just like lowering the encoding speed.
If you have the extra time, AV1 is the absolute best codec, it will make the smallest files but it takes the longest time to do that.
VP9 is probably the best balance of encoding speed and quality if you're in a hurry, but H264/265 or AV1 might still win on speed in some cases.
