That's called "Extinction". The behavior goes extinct. But interestingly, if reward is used to teach a behavior, and then applied intermittently later on, it reinforces the behavior even stronger. An counterintuitive outcome.
Finally, there's punishment. And that teaches what NOT to do. A rat is punished (with an electric shock in the original experiment) when it behaves in a way the experimenter didn't want.
