Whole guineafowl for two night. Jointed and made fragrant Thai stock with the carcase, most in the soup which used the meat from the roasted legs, rest of the stock to poach the breast then to make the peanut sauce.

Badrijani nigvzit, mamaliga, cucumber
That is Georgian aubergine with walnut stuffing, polenta, and garlic, chilli, and dill salt & vinegar cucumbers. Or nearish. I didn't have fresh pomegranate, but used a little pomegranate molasses in the walnut mix.
All inspired by books from the excellent Olia Hercules.

I mean, it's basically onion, garlic, creme fraiche, Dijon, and mushroom, so would be great with more mushrooms.
