My #vegan dinner tonight: sweet potato and black bean enchiladas, red enchilada sauce, cashew cream and chopped white onion. This was my first time making cashew cream and I think it will be a regular part of my Mexican food repertoire going forward!

@npub1ecp…59pq Went to Vegas a few times in the '90s and had some good times. My last visit was in 2006 and I haven't been back since. A lot of these same problems existed back then but it sounds like things are much worse now.
