Frozen Pea Salad
Ingredients:
1 lb bag frozen peas
1 can spanish peanuts (dry roasted peanuts work too)
2 bunches scallions (green onions)
2 cups diced celery
1 cup mayonnaise
1 cup sour cream
Preparation:
1. Whisk mayonnaise and sour cream together and set aside
2. Remove root end of scallions, then slit in half lengthwise, then cut crosswise about 1/8 inch wide.
3. Slice celery stalks into about five strips lengthwise, then cut crosswise about 1/4 inch.
4. Mix frozen peas, scallions and celery in a chilled salad bowl
5. Blend in dressing with a rubber spatula
6. When well blended, mix in peanuts.
7. Chill until served.
This makes a lot. Cut in half if you need to because leftovers don't keep well.
