They are not linkable for the public observer as amounts are blinded on Liquid and additionally Taproot Swaps generally made swap transactions indistinguishable from any other regular transaction.
BUT we do have the link! Therefore, privacy on Lightning is a bit better as one can't tell with certainty where a Lightning transaction was sent from.
That being said, Boltz respects privacy but is NOT a privacy solution or a substitute for e.g. coinjoins.

We know the chain origin and final lightning destination in Chain -> Lightning Swaps. We do *not* know the origin in Lightning -> Chain swaps but, the chain destination. We always know amounts.
Publicly, privacy is not too bad with confidential transactions hiding asset and amounts on Liquid (but not tx graph), and with Taproot Swaps it's additionally pretty tough to tell that a tx was part of a swap.
Will start a FAQ section in docs with this as we get this question a lot. Thanks for asking and pushing for transparency!

Anyone with contacts to a tech-savvy person at Kraken please relay this! The issue is not easy to get across, user tried with Kraken customer service for two weeks to no avail.
What happened:
- user accidentally pasted Kraken's ln node pubkey as "destination" in a Boltz swap
- turns out node pubkeys are valid P2PKs (the thing before there were Bitcoin addresses), so the swap went through
- now the funds are sitting in a P2PK which Kraken should have keys for
