Got to eat the real Pad Thai in Thailand (as well as fried mussels), and nothing is going to compare to it in the US. I'm sure I'll try to recreate it at some point.
Fun bit of history:
The Thai loved Chinese food with noodles, so the Thai government wanted a Thai dish that used noodles. Pad Thai was the result.
