Reservoir maintains temp overnight as it sits, ready to go in the morning.
During the day reservoir temp is not as well-maintained due to more frequent use.
You could test this during the day by not using any hot water in the morning (I know... I know...) and seeing if it's then immediately hot in the afternoon.
