I believe Pixelfed in particular allows you to, for example, use the official Mastodon app to log into your Pixelfed account. But Mastodon does not allow you to use the Pixelfed app to log into your Mastodon account.
For me, I think the problem boils down to this: The fediverse marketing message often says "pick any server and you can use the fediverse from there!" but in reality these server implementations may speak ActivityPub but are not completely compatible with each other. If this in particular is what bothers you then I'm with you 100%. It is not as advertised.
