With ubiquitous tools like VSCode, NeoVIM etc you'll probably be using the same tools anyway. Obviously make sure whatever tools you need are available on Mac.
The only crash I've had on the M1 Mac was thanks to MS Office. I tried to open a big .csv from an email and the Mac rebooted on me. The only thing that fixed it was to save the .csv locally first.
