I used to be one of them, back when I was a teen anyway. What got me to change was an ex that got a whole lot more info on my whereabouts online and offline from a data-broker than I ever expected possible and it wasn't considered "stalking" since the data was openly available online for whoever to purchase since I agreed to the terms. (she took marketing classes so it figures she would know how to do that).
After realizing how invasive data-collection has become, I changed how I do everything with my devices. I run a de-googled OS on my phone, rarely use SMS, mastodon is the closest social media I touch, everything online is done with firefox & LibreWolf with multi-account containers for everything. I use linux on a mini-PC for my TV's for streaming, I run a network vpn just to add another layer of security and automatically rotate my useragent to reduce browser fingerprinting, auto-delete cookies when closing a tab and use linux/open source/self-hosted applications (like Home Assistant, nextcloud & AdGuard Home DNS) for almost everything. When I asked someone try to gather info more recently, the most they could come up with is very basic info likely sold by such places as my bank and the hospital. Nothing too useful.
I just try to tell those folks that story, and most of the time the response I get is "well I am just more careful than you were" or "I just don't care about my privacy because I'm not trying to hide" (but i wasn't "trying to hide" either) but its not like I was just tossing around info everywhere, and I was careful. But obviously not careful enough.
At that point, I just say "well, when you do end up personally affected, just remember what I told you" and i have to cut-off the conversation, because its useless after that to continue speaking. Wastes my energy and they tune everything out at that point anyway thinking they are better than everyone else because they think they have control over something they do not understand.
