Yes, if it's dry in the house and doesn't get too humid overnight, it could work. I would recommend blending the whole apple and pouring it onto a silicone sheet, no more than 3mm thick. I juiced the apples (because I was too lazy to take out all the apple peel) and blended them with dates (because these apples are really sour). What can also help is adding a spoonful of psyllium husk powder to help it thicken faster and make the "leather" more pliable. However, you have to pour the psyllium husk powder into the blended mixture while blending because it clumps up super quickly!
