LEAF LARD BRIOCHE BUNS (Pulled Pork’s Perfect Throne)
📜 Ingredients:
* 500g bread flour (or fresh-milled hard wheat)
* 250g whole milk (raw if possible)
* 50g Epic leaf lard (softened)
* 2 pasture-raised eggs (+ 1 extra for egg wash)
* 30g raw honey
* 9g Himalayan salt
* 5g active dry yeast (or 100g sourdough starter)
⚔️ Method:
1. Mix flour, milk, lard, eggs, honey, yeast. Autolyse 30 mins. Add salt.
2. Knead 10 mins → ferment 2 hrs (fold once).
3. Shape into 80g balls, proof 1.5 hrs.
4. Bake at 375°F (190°C) on steel → 15 mins (brush with egg wash + melted lard).
