Say I have a server at some IP (e.g. myfile.com).

If I have a machine on the same network (as the server) and I try to download a file from it using myfile.com the download speed is slow, however if I try to download from the local IP for said machine, it's super fast.

Why is that?

myfile.com would resolve to the router's IP, and then I would expect the router to port forward 80 -> local IP address

Is the file being uploaded to some server somewhere and then re-downloaded to my machine?
