I mean, the white paper is probably the best place to start. Investopedia actually does a decent job of explaining mining if the white paper is too dense. Obviously you'll want to go beyond that though as there have been improvements; some topics to check out would be Segwit. In general taking a look at the BIP's will help you to catch up with the changes between the white paper and where we are today, and they can all be found here:

They also only pertain to Bitcoin itself, not L2's (such as Lightning or Liquid). In general I'm big on going straight to the source that defined any of these standards, and when you find something in it that is too technical to understand, throw it into your favorite search engine, or these days, ask your friendly neighborhood AI to ELI5.
