Okay. So I have two pizza crusts rising in the oven. They're from a stiff dough made with about 80% bread flour, 20% semolina. I need to decide whether to pre-cook the crusts, or just do the usual and heat the oven to 230⁰C while piling on the sauce and toppings. Suggestions?
