I'm realizing that there's a block in every ~10min and there's a limited amount of space in there, and that anybody can sign any digital message (Bitcoin transaction is literally a digital message) and make it as a Bitcoin transaction.

And if the transaction is valid and pays for that block space to miner who did all the work and spend energy to mine that, why should you care what message they sign?

Actually, telling what kind of messages people should and should not sign is against freedom and the very first princibles of Bitcoin, censorship resistance.
