Visiting the farmer's market today inspired me: Nopal tacos with Hodo tofu and avocado. The flowering cilantro tasted great, but the stems were a bit too woody for my taste.

But for real, I don't get why nopales aren't featured in more cuisines. They're delicious, healthy weeds that grow almost anywhere.
