For my little experience, if you choose Plasma, always use cutting edge distros. The development is fast and so the stability improvements and bug fixing.
I switched from Kubuntu to KaOS, rolling, because Canonical chose to stay on Plasma 5.27 (an older version) which is much more buggy than the new Plasma 6.
