The Godot Foundation certainly has the know-how and infrastructure to set-up one of the "off-the-shelf" self hosted alternatives that don't submit data to anyone besides the intended recipient.
Besides, using Google Forms blocks people who don't have a google account from participating (I know that's rare, but still...)
