I'd give you points for originality, except it is more or less the plot of J. Michael Straczynski's television show Jeremiah - a world where all the old people are dead due to a plague and the kids have to reinvent civilization without the benefit of adult tutelage. The difference there was his plague was short but near total, not some gradual slow boil.
I do wonder what Covid +10, +15, +20 looks like in terms of demographic shifts and life expectancy and basic quality of life.
