I've been doing woodworking and carving since I was a kid so it would never have occurred to me to use a chisel this way (in my mind, chisels are for going forward with, not side-to-side). Until I saw the picture you shared and the video confirmed it, I was thinking you were somehow using it like a bookmaker's guillotine. I'm definitely going to build a press and try this out!
