Electrum installed on a flash drive, running on a stable version of Debian installed on another flash drive. You start your computer from the latter flash drive.
Make that computer old and beat up, so no one ever takes it. This way you’re safe even if you don’t eject the flash drives.
Also. Don’t install the wifi drivers, the computer only connects to the net via a cable when you start it every now and then.
