The Cell architecture in the PS3 was at least an eccentric and novel idea (for a console); and in handhelds the DS and 3DS are completely unique. Nintendo also continued to do Nintendo things and augment the technical progression with completely new control schemes with IR and gyro detection in the Wii, and dual screens and touch in the Wii U. Sony brought in the Vita, and the PS5 has some really interesting ideas for controller hardware. Microsoft managed to bring depth cameras to consumers with the Kinect too.
Obviously not all these ideas stuck. Depth cameras were a dead end I think, and although the Vita flopped I think it did pave the way for the current boom in handheld hybrid consoles.
