Before I see my father in law I have to brew a traditional Korean rice wine called 막걸리 (makgeolli). I practice a bit throughout the year, but the final brew is the important one.
This time I made on of the batches with 50% black rice, or 흑미. Also known as emperor’s rice or forbidden rice. It turns the drink this pink color… The smell is a little weird as it ferments, but the end result is delicious and a bit Smokey.
