Yeah. It's catchy slogans to drive home the message of distrust clearly. It's important that we have extremely high standards for trust and are aware of the possibilities. The idea that an IOU is completely worthless just because there's a 0.1% chance it will become irredeemable, is a little overkill, but it drives home the message as quickly and effectively as possible that you don't know, that there is that real chance. It's like an oversimplified guideline.
The way it all works in reality is we tailor our risk tolerance to ourselves, as well as craft a risk model, an understanding of how this all works, in our heads. We use the tech but allocate this percent or that percent to onchain, liquid, lightning, cashu, etc... we engage our friends with certain subsets of that and help them allocate for what makes sense for their use cases and risks. The simple message is just a good reminder for plebs who've been in a long time, and a good initiation for new plebs who are ready to become paranoid.
