To go back on the points in your original take and explain why I believe it doesn't fit the framework you are describing:
Superposition: UTXOs are always unspent thus are in a deterministic state (the timechain being the only guarantor of truth).
Entanglement: One can't just make UTXOs interact like particles, you either destroy them to create new UTXOs or you don't. Once they are destroyed that's the end of their story.
Measurement: Before a new block is mined a UTXO is unspent, this is a deterministic state therefore there is no need to collapse any wave function.
I hope this makes my argument clearer.
Thanks for sharing yours thoughts on this, though I disagree It has been interesting to think about.
