I think finding the right work/life balance is important and I feel this more as I get older. I do think sometimes it can be worthwhile taking a risk on a different role with more work but similar pay if it does genuinely provide experience that will benefit your career, and you view it as a temporary stepping stone rather than something you going to get locked in to for a long time and eventually burn out. I've done similar myself in the past.
Also, from past experience, I would say don't get attached to a particular opportunity or company (unless it is your own). If you aren't enjoying it or you see problems with the company then look for something else. Earlier in my career I worked for a smaller startup company which seemed like great opportunity to build something from the ground up. It wasn’t a great environment to work in, I put in a lot more work than I was being paid for thinking it would be rewarding in the long term, but the company ended up in administration a year later. From that experience I now value a lot more having work that I enjoy, good colleagues to work with, and a good working environment over other things.
