OK. for UW, the U District, obviously. I think every uni but Seattle Pacific are on the light rail, so the main focal points will be consecutive stops: Capitol Hill, Westlake (Pike Place Market/mall), Symphony(Seattle Art Museum), Pioneer Square (bars, mostly), Chinatown/Intl District.
Beyond that: Fremont and Ballard are fun neighborhoods to walk around. Go down to the waterfront/sculpture park, starting from Pike Place. Seward Park or Green Lake if they're outdoorsy.
