I seem to have found a working solution for my daily driver problem.
The mini pc I used is great - no question about it.
But it can't really compete with more than maybe two vm's... which for me was a huge issue. (I do stuff for work in a Windows vm and also have a dev vm running).
The solution:
Me being a tech hoarder has found another system with a decent i7 processor that fits into a PC that I've had laying around here... ordered a new cooler and now the system runs well - with 32GB of RAM.
