This is how I _think_ thinks work…
All of the data that's protected more by Advanced Data Protection is already encrypted in the cloud even under Standard Data Protection, but the keys are stored in the cloud and Apple has access to them. When you enable ADP, the keys for those data are downloaded from the cloud to your devices, and then the keys are removed from the cloud.
That is, they don't reencrypt the data, they just change where the keys are stored.
