I never though I would be eating a bell pepper like some folks eat apples.

You know why Green bell peppers are cheaper than the colored bell peppers? The colored ones are ripe. The plants "know" they have produced finished seed for the year, and start slowing production. Green ones aren't ripe. The plants don't slow production of more after they are picked.
