Yes fair enough, there are real criticisms of XMPP. The OMEMO should be putting the sender inside the message like Signal. Although your choice of server makes this less critical.
And yeah, the CIA funding Signal is a big issue for using it to hide from the CIA. It can be shut down if you're criticizing the government, but they use it to flip other countries they don't like
