Every year I do the turkey for Friendsgiving, and every year it's a wet brine, a traditional truss and a classic roast. Not this year: I'm spatchcocking and dry brining for the first time ever. Why? Well, for one thing, you'll never learn new things unless you try new things! also we're hosting 22 friends and seven of their children this year, so we need to fit two birds in the oven, lol.
