I've grown recently to love grilling. Being from Southeast Louisiana I've always been a jambalaya, gumbo, red beans & rice, ettouffee type of cook, but the joy of throwing a boston butt, whole chicken, rack of ribs or whatever you like in a smoke box has really got me going in that direction. Don't get me wrong, I still love my Cajun cooking in the ol black iron pot over a burner outside, but It's something else to throw some big ol hunks of meat in a smoker and get that bitch where it melts in your mouth it's so good.
