There is no need to skin them, it gives the jam the purple colour. Since the stones are still firmly attached I just cut around the fruit through the groove, twist, save the good half for cake and cut the other from the stone with a sharp little knife. To make jam I just use the immersion blender after cooking the fruit briefly.
I still have a few kg to go. Happy sigh 😀
