If you can tolerate old, janky animation then start with the very first one: Gundam 0079. That show and it's various sequels/prequels are what's known as the Universal Century or UC timeline. That's the "main" Gundam timeline that everything else is spun off from.
If you want something a little more modern, then there are various Gundam spinoffs that take place in alternate universes, so to speak. They have no relation to the "main" Gundam timeline or to each other. So you can pretty much pick up whichever one looks the most interesting to you and watch that. Personally I'd recommend Gundam 00, Gundam Wing, Gundam X, and G Gundam.
Also, the newest season you're referring to is another one of those AU stories. So it being pozzed has no bearing on any Gundam series other than itself.
