for full manual control someone in my class recommended ProCam. i believe it costs money but it offers support to shoot in raw and adjust shutter speed etc.
i have not used it as i am on ios but i have found that the more manual camera apps tend to not have the horrible looking AI sharpness filter things that most of the default smartphone camera apps do now...
