I know there are more complex elements that are in many documents, but more often than not CommonMark is going to meet your needs. It's not fancy or anything, but if you're writing a document you're rarely going to go outside of it's capabilities. That being said, multiple formats of markdown wouldn't be impossible. There's already eight different Word options between documents and other stuff.
