I don't buy it at the ice cream shop. I make it at home (YAKES A LOT!)
Coconut ice cream
INGREDIENTS:
- 2 coconuts
- 1 liter of milk
- 2 tbsp cornstarch
- Water to dissolve the starch
- 1 cup powdered milk
- 1 can condensed milk
- grated coconut to taste
WAY OF DOING:
Remove the water from the coconuts. Open the coconuts, remove the shell and chop the pulp. In the blender, place the coconut pulp, add the milk and process for approximately two minutes.
Place the mixture in a pan and stir over medium heat until heated through. Add powdered milk and condensed milk, stirring until smooth. Dissolve the cornstarch in a little water and mix it together in the pan.
Once it reaches a thick consistency, remove from the heat and add the grated coconut. Let it cool and distribute the mixture into molds or popsicle bags, insert the stick and place in the freezer for four hours. Serve!
