Tend to feel the same way bout arugula - Generally very bitter ime. Can enjoy a little of that, but I know people who will make a whole salad out of the stuff.

I may have confused the question w/ 'blanch'. I don't mean like boiling for a few minutes before you freeze something. They also call it 'forcing' - you grow in darkness after you've built up a root. Similar to what they do w/ rhubarb to get those light-pink/less-sour(oxalic-acid) shoots. Iirc, that process is supposed to prevent a lot of the bitterness that makes it unappealing for a lot of people. I believe chicory, endive, and radicchio are the same species, and the cultivar generally used for forcing is witloof de bruxelles.
