one food i think was virtually unknown in Norway for much of my childhood was brown molasses sugar.

there was hard brown sugar - the kind you bought a block of and broke off a piece of to suck on with a cup of coffee - something old people would do according to my father

but the wet kind you see in American cookie recipes? you simply couldn't get that at grocery stores here in the 80s and 90s.

i think we were well into the 00s before you were able to commonly find that here. most housewives just weren't baking stuff like chocolate chip cookies. that's not the tradition for cakes here. we took more influence from Belgian sweets/cakes and they're largely into refined sugar.
