It's more like, you trust a physicist to explain quantum mechanics more than you trust some guy on Reddit.
The question with saints comes in with whether or not a "saint" has actual insight, or if he's in prelest, and most of the time it's going to be the latter. He becomes confident in the system he's learned and teaches it with confidence.
They're the same as the alchemists.
