You're wrong. Recording at much higher sampling rate prevents aliasing and it's much easier to apply a low-pass filter in software rather than in analog circuits before ADC. Many (most?) ADCs actually do something like 384kHz sampling rates and only output whatever you requested.

But I agree that listening to that kind of audio makes little sense, unless you're a dog or a dolphin.
