I used to do TM to an iSCSI target but the problem is that you can't do bare metal recovery from iSCSI. The drivers are 3rd party and won't be in the recovery mode so you'll have to clone the iSCSI volume to an external disk you can connect directly to the Mac first, which works fine but is super tedious.
TM over iSCSI was really fast and reliable though 😭
